Ingredients
- 1 (20 oz) bag frozen cauliflower rice, about 4 cups, no thawing needed
- 1 tablespoon butter
- 1/4 cup milk, whole or 2% works best
- 4 tablespoons cream cheese, 2 ounces, softened
- 2 cups shredded cheddar cheese, sharp or mild, your preference
- seasoning to taste, salt, black pepper, and garlic powder recommended
Instructions
- Heat the Butter: In a large skillet over medium heat, melt the butter until it foams slightly, about 1 minute. Avoid browning it.
- Add Cauliflower Rice: Pour in the frozen cauliflower rice directly from the bag and stir frequently for 5-7 minutes until it releases its moisture and begins to soften.
- Create the Cheese Sauce: Reduce heat to medium-low, then add the cream cheese and milk, stirring constantly until the cream cheese melts completely, about 2 minutes.
- Melt in the Cheddar: Gradually add the shredded cheddar cheese, stirring gently until fully incorporated and the mixture is smooth, about 2-3 minutes. The sauce should be creamy and coat the cauliflower evenly.
- Season and Finish: Taste the mixture and add salt, black pepper, and garlic powder as needed. Stir well and remove from heat.
