Chopped Cheeseburger Biscuits

  • Total Time: 45 minutes
  • Yield: 4 servings

Description

These Chopped Cheeseburger Biscuits feature seasoned ground beef mixed with sautéed onions and melted cheddar cheese, all nestled inside fluffy Pillsbury biscuits that bake to golden perfection. They’re the ultimate comfort food that tastes like a cheeseburger but comes together in just 30 minutes, making them perfect for busy weeknights or casual family dinners.

Ingredients

  • 1 pound ground beef, 80/20 blend works best for flavor and texture
  • 1 tube (8 count) Pillsbury biscuits, refrigerated, ready to bake
  • 1 cup shredded cheddar cheese, sharp or mild, your preference
  • 1 small onion, finely chopped
  • 1 teaspoon Montreal Steak seasoning, or salt and pepper to taste
  • Optional ingredients, diced pickles, crumbled bacon, sliced jalapeños, or additional cheese varieties

Instructions

  1. Brown the Beef: In a large skillet over medium-high heat, add the ground beef and break it apart with a wooden spoon, cooking for 5-7 minutes until no longer pink.
  2. Add the Onions: Stir in the chopped onion and cook for another 2-3 minutes until softened and fragrant.
  3. Season: Add Montreal Steak seasoning (about 1 teaspoon or to taste) and mix well, cooking for 1 minute to allow flavors to meld.
  4. Drain if Needed: If excess fat has accumulated, drain some off with a paper towel, then remove from heat and let cool slightly for 2-3 minutes.
  5. Preheat Your Oven: Set it to 375°F as directed on the Pillsbury biscuit tube.
  6. Separate the Biscuits: Pop open the tube and carefully separate each of the 8 biscuits along the perforations.
  7. Flatten Each Biscuit: Using your fingers or a rolling pin, gently flatten each biscuit into a thin 4-inch circle, just enough to hold the filling without tearing.
  8. Fill Each Biscuit: Place about 2-3 tablespoons of the cooked beef mixture in the center of each flattened biscuit.
  9. Add Cheese: Top the beef with roughly 2 tablespoons of shredded cheddar cheese per biscuit.
  10. Wrap and Seal: Fold the edges of the biscuit up and over the filling, pinching the seams gently to seal, creating a pouch shape.
  11. Arrange and Bake: Place the filled biscuits seam-side down on a greased baking sheet and bake for 12-15 minutes until golden brown and cooked through.
