Ingredients

  • 1 pound ground beef, 80/20 blend for best flavor and texture
  • 2 boxes Velveeta macaroni and cheese, the classic creamy base
  • 1 can Rotel diced tomatoes and green chilies, 10 ounces with liquid
  • 1 packet taco seasoning, 1 ounce or homemade blend
  • Optional toppings, shredded cheddar cheese, jalapeños, sour cream, fresh cilantro, diced onion, or crushed tortilla chips
  • Optional vegetables, bell peppers, corn, black beans, or diced zucchini

Instructions

  1. Brown the Beef: In a large skillet over medium-high heat, add the ground beef and cook, breaking it apart with a spoon, until fully browned and no pink remains, about 7-8 minutes.
  2. Add Seasoning: Drain excess fat if needed, then sprinkle the taco seasoning packet over the cooked beef and stir well to coat evenly.
  3. Combine with Rotel: Pour in the can of Rotel diced tomatoes and green chilies with the liquid and stir to combine, cooking for another 2-3 minutes until warmed through.
  4. Cook the Pasta: Bring a large pot of salted water to a boil and cook the pasta from both boxes according to package directions, about 7-8 minutes, then drain well.
  5. Make the Cheese Sauce: Return the pot to medium heat and prepare the cheese sauce according to the box directions, using the butter, milk, and cheese powder provided.
  6. Combine Pasta and Sauce: Add the cooked pasta back to the pot with the cheese sauce and stir until fully coated and creamy.
  7. Mix Everything: Pour the seasoned ground beef mixture into the pot of creamy mac and cheese and stir thoroughly until evenly distributed.
