Description
Famous Butter Ritz Chicken features tender boneless chicken pieces coated in crushed Ritz crackers and topped with melted butter, then baked until golden and crispy. This nugget-style chicken is perfect for busy weeknights, lunch prep, or feeding hungry families.
Ingredients
- 3 to 4 boneless chicken breasts, cut into bite-size pieces, about 1 to 1.5 inches each
- 2 eggs, beaten well
- 2 cups crushed Ritz crackers, finely crushed for an even coating
- 1/2 stick butter, cut into small pieces
- seasoning to taste, salt and pepper at minimum
- Optional ingredients:, garlic powder, paprika, or parmesan cheese mixed into coating
Instructions
- Cut the Chicken: Slice your boneless chicken breasts into bite-size pieces, aiming for pieces about 1 to 1.5 inches in size so they cook evenly and stay tender inside.
- Set Up Your Stations: Place beaten eggs in one shallow bowl and crushed Ritz crackers in another shallow bowl, making it easy to coat each piece quickly.
- Coat Each Piece: Dip each chicken piece into the beaten egg, then immediately roll it in the crushed crackers until fully coated on all sides, about 30 seconds per piece.
- Preheat and Prepare: Preheat your oven to 375°F and line a baking sheet with parchment paper or lightly spray it with cooking spray.
- Arrange on the Pan: Place all coated chicken pieces on the prepared baking sheet in a single layer, spacing them about an inch apart so heat circulates evenly.
- Add Butter: Distribute the butter pieces evenly over and around the chicken, dotting them across the tray so the butter melts and infuses the coating as it bakes.
- Season and Bake: Sprinkle salt, pepper, and any additional seasonings over the chicken, then bake for 25 to 30 minutes until golden brown and cooked through, with an internal temperature of 165°F.
