Description

Ingredients

  • 8 frozen burritos, steak and cheese variety, or your favorite filling
  • 1 (28 oz) can enchilada sauce, red or green sauce based on your preference
  • 2 cups shredded Mexican cheese blend, a mix of Monterey Jack, cheddar, and other Mexican cheeses

  • Optional toppings, sliced jalapeños, fresh cilantro, diced red onion, or additional sour cream

Instructions

  1. Preheat your oven: Set it to 350 degrees Fahrenheit and lightly grease a 9×13 inch baking dish with cooking spray or butter.
  2. Layer the base: Spread about one-third of the enchilada sauce across the bottom of the prepared baking dish to prevent sticking.
  3. Arrange burritos: Place all 8 frozen burritos seam side down in a single layer over the sauce, fitting them snugly side by side.
  4. Add remaining sauce: Pour the rest of the enchilada sauce evenly over the burritos, making sure each one gets a good coating.
  5. Top with cheese: Sprinkle the shredded Mexican cheese blend generously over the entire casserole until the sauce is mostly covered.
