Ingredients
- 8 frozen burritos, steak and cheese variety, or your favorite filling
- 1 (28 oz) can enchilada sauce, red or green sauce based on your preference
- 2 cups shredded Mexican cheese blend, a mix of Monterey Jack, cheddar, and other Mexican cheeses
- sour cream, for serving
- Optional toppings, sliced jalapeños, fresh cilantro, diced red onion, or additional sour cream
Instructions
- Preheat your oven: Set it to 350 degrees Fahrenheit and lightly grease a 9×13 inch baking dish with cooking spray or butter.
- Layer the base: Spread about one-third of the enchilada sauce across the bottom of the prepared baking dish to prevent sticking.
- Arrange burritos: Place all 8 frozen burritos seam side down in a single layer over the sauce, fitting them snugly side by side.
- Add remaining sauce: Pour the rest of the enchilada sauce evenly over the burritos, making sure each one gets a good coating.
- Top with cheese: Sprinkle the shredded Mexican cheese blend generously over the entire casserole until the sauce is mostly covered.
- Bake covered: Place the casserole dish in the preheated oven and bake covered with aluminum foil for 20 minutes, which helps the burritos heat through gently.
- Uncover and finish: Remove the foil and bake for an additional 10 to 15 minutes until the cheese is melted, bubbly, and starting to brown slightly at the edges.
- Rest before serving: Let the casserole sit for 2 to 3 minutes after removing from the oven, allowing the sauce to set slightly and making it easier to serve.
