Ingredients
- 1 pint cherry or grape tomatoes, halved if they are large
- 1 large cucumber, cut into bite-size pieces
- 1 (9.5oz) jar pitted kalamata olives, drained
- 1 (8oz) chunk feta, cut into 36 cubes
- 1 bottle Greek or Italian dressing, for coating and drizzling
- 12 small skewers, wooden or metal, about 6 inches long
Instructions
- Prepare the Tomatoes: Rinse your cherry or grape tomatoes under cool water and pat them dry with paper towels. If any are particularly large, slice them in half lengthwise, otherwise leave them whole for easier threading.
- Cut the Cucumber: Wash the cucumber thoroughly, then cut it into bite-size pieces roughly the same size as your tomatoes. You can peel it or leave the skin on for added texture and color.
- Drain the Olives: Open the jar of kalamata olives and carefully pour them into a colander to drain any excess brine, then pat them dry with paper towels.
- Cut the Feta: Remove the feta chunk from its packaging and use a sharp knife to cut it into approximately 36 small cubes, about the size of dice.
- Thread the First Layer: Start by placing a cucumber piece on the tip of your skewer, pushing it gently down about an inch from the point.
- Add the Feta: Next, slide a cube of feta onto the skewer, followed by a tomato half.
- Add the Olives: Thread an olive onto the skewer, then repeat the pattern of cucumber, feta, tomato, and olive until your skewer is full but not overcrowded, leaving about 1 to 2 inches at the handle end.
- Coat with Dressing: Arrange all assembled skewers on a serving platter or lined baking sheet, then drizzle generously with your Greek or Italian dressing, making sure to coat all the ingredients evenly.
