Ingredients

Instructions
- Combine the bananas and eggs: In a blender or mixing bowl, add the 2 ripe bananas and 2 eggs together. Blend or whisk until the mixture is smooth and well combined, about 1 minute.
- Add the oats: Pour in the 1 cup rolled oats and blend again until the oats break down into a flour-like consistency, about 30-45 seconds. The batter should be thick but pourable.
- Season and customize: Stir in any optional flavor boosters like vanilla extract or cinnamon to taste. If you'd like to add mix-ins like berries or nuts, fold them in gently at this point.
- Heat the skillet: Place a non-stick skillet or griddle over medium heat and lightly coat with cooking spray or butter. Let it heat for about 1-2 minutes until a drop of water sizzles on contact.
- Pour the batter: Spoon about 1/4 cup of batter onto the skillet for each pancake, spacing them about 2 inches apart. Don't overcrowd the pan.
- Cook until golden: Cook for 2-3 minutes on the first side, until the edges look set and the bottom is lightly golden. Carefully flip and cook for another 1-2 minutes until the second side is golden brown.
