Ingredients
- 1 box spice cake mix, any brand works well
- 2 cups applesauce, unsweetened for best results
- 1 large apple, diced, any variety such as Granny Smith, Honeycrisp, or Fuji
- Optional toppings, cinnamon sugar, chopped walnuts, or candied apple pieces

- Prepare the Batter
- Combine Dry Mix and Applesauce: In a large mixing bowl, pour the spice cake mix and add the applesauce, stirring until just combined, about 1 minute. The batter will be thick and slightly lumpy.
- Fold in the Apples: Gently fold the diced apple pieces into the batter using a spatula, being careful not to overmix. The apple pieces should be evenly distributed throughout.
- Fill the Muffin Cups: Line a muffin tin with paper liners or lightly grease the cups. Divide the batter evenly among 12 muffin cups, filling each about three-quarters full.
- Baking the Muffins
- Preheat and Bake: Preheat your oven to 350°F (175°C) and place the muffin tin on the middle rack. Bake for 20-25 minutes, until a toothpick inserted into the center of a muffin comes out clean or with just a few moist crumbs.
- Cool in Pan: Allow the muffins to cool in the tin for 5 minutes before turning them out onto a wire rack to cool completely, about 10 minutes total.
