3 Ingredient Cake Mix Banana Muffins (2 Ways!)

3 Ingredient Cake Mix Banana Muffins (2 Ways!)

  • Total Time: 40 minutes
  • Yield: 12 servings

Description

These muffins feature fluffy texture and rich banana flavor made from just three pantry staples: a box of cake mix, very ripe bananas, and eggs. You can bake them as individual muffins or transform the same batter into banana bread for a different texture, making this recipe incredibly versatile for any occasion.

Ingredients

  • 1 box (15.25 oz) cake mix, yellow or chocolate
  • 3 large very ripe bananas, the darker the peel, the sweeter the result
  • 2 large eggs
  • 1/2 cup mix-ins of your choice, chocolate chips, chopped nuts, shredded coconut, or cinnamon

Instructions

  1. Preheat and Line: Heat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly. This takes just two minutes and prevents sticking.
  2. Mash the Bananas: In a medium bowl, mash the three ripe bananas until mostly smooth with just a few small chunks remaining. About one minute of mashing with a fork achieves the perfect texture.
  3. Combine the Ingredients: Add the cake mix box and two eggs directly to the mashed bananas. Stir with a wooden spoon or whisk until just combined, about one to two minutes. The batter will be thicker than traditional cake batter.
  4. Fold in Mix-Ins: If using chocolate chips, nuts, or other add-ins, gently fold them into the batter with a spatula. This ensures even distribution throughout the muffins.
  5. Fill the Cups: Divide the batter evenly among the muffin cups, filling each about two-thirds full. This leaves room for the muffins to rise without overflowing.
  6. Bake: Place in the preheated oven for 20 to 25 minutes, until a toothpick inserted in the center comes out clean or with just a few moist crumbs clinging to it.
  7. Cool: Let the muffins rest in the tin for 5 minutes, then turn them out onto a wire rack to cool completely before serving.
