Ingredients

  • 1.5 pounds boneless skinless chicken breasts, cut into bite-sized pieces
  • 2 cups Minute Rice, white or brown
  • 1 can cream of mushroom soup, undiluted
  • 1 can cream of chicken soup, undiluted
  • 1 can water, use one of the empty soup cans
  • 1 envelope Lipton Onion Soup Mix
  • 1 tablespoon butter
  • Optional toppings, salt, black pepper, fresh parsley, shredded cheddar cheese, or crispy fried onions

Instructions

  1. Prepare the Chicken: Remove any excess fat from the chicken breasts and cut them into bite-sized pieces, about 1 to 1.5 inches, so they cook evenly throughout the casserole.
  2. Season Lightly: Toss the chicken pieces with a pinch of salt and pepper, though the soup mixes will provide plenty of flavor.
  3. Preheat Your Oven: Set your oven to 350 degrees Fahrenheit and lightly grease a 9×13-inch baking dish with butter or cooking spray.
  4. Combine the Base: In a large mixing bowl, combine the cream of mushroom soup, cream of chicken soup, water, and Lipton Onion Soup Mix, stirring until well blended and smooth.
  5. Layer the Ingredients: Spread the uncooked Minute Rice evenly across the bottom of the prepared baking dish, then scatter the chicken pieces over the rice.
  6. Pour the Sauce: Pour the soup mixture evenly over the chicken and rice, making sure everything is submerged, then dot the top with 1 tablespoon of butter cut into small pieces.
