Ingredients

  • 1 pack (13 ounces) Cajun andouille sausage, cut into coins
  • 1 tablespoon chopped garlic, fresh or minced
  • 1 can (14.5 ounces) chicken broth, approximately 2 cups
  • 1 can (14.5 ounces) Rotel diced tomatoes and chilies, do not drain
  • 1/2 cup heavy cream
  • 8 ounces dry bowtie pasta, approximately 2 cups or 1/2 pound
  • 2 cups shredded cheddar cheese
  • 1 teaspoon Cajun seasoning, adjust to taste for heat preference
  • Optional garnishes, fresh parsley, sliced green onions, extra Cajun seasoning, or crushed red pepper flakes

Instructions

  1. Brown the Sausage: Slice your andouille sausage into coins about 1/4 inch thick. Heat a large pot over medium-high heat and add the sausage, cooking for about 4-5 minutes until the edges are deeply browned and the fat begins to render. Remove to a plate and set aside.
  2. Sauté the Garlic: In the same pot with the sausage drippings, add the chopped garlic and cook for 30 seconds to 1 minute until fragrant, stirring constantly.
  3. Add the Broth and Tomatoes: Pour in the chicken broth and Rotel diced tomatoes with chilies, scraping up any browned bits from the bottom of the pot with a wooden spoon.
  4. Cook the Pasta: Add the dry bowtie pasta directly to the pot and stir to combine. Bring the mixture to a boil, then reduce heat to medium and simmer for 8-10 minutes, stirring occasionally, until the pasta is nearly tender and some liquid remains.
  5. Create the Cream Sauce: Reduce heat to low and stir in the heavy cream and Cajun seasoning. Return the browned sausage to the pot and stir gently.
  6. Finish with Cheese: Add the shredded cheddar cheese in two additions, stirring after each addition until completely melted and incorporated, creating a smooth, silky sauce that coats the pasta.
