Pepperoni Pizza Quesadillas (Quick & Easy Dinner Idea)

  • Total Time: 15 minutes
  • Yield: 2 servings

Description

These pepperoni pizza quesadillas feature a crispy golden tortilla exterior filled with melted cheese, savory pepperoni slices, and aromatic Italian seasoning for an irresistible pizza-inspired treat. Perfect for busy weeknights or a quick lunch, these quesadillas come together in minutes with just a handful of simple ingredients.

Ingredients

  • 1 large flour tortilla, or use two 8-inch tortillas for individual servings
  • 1/3 cup shredded cheese, cheddar, mozzarella, or a Mexican blend
  • 68 pepperoni slices, use full-size slices or mini pepperoni
  • 1/2 teaspoon Italian seasoning, dried herbs add authentic pizza flavor
  • 1/4 teaspoon garlic powder, enhances the savory depth
  • 1 tablespoon butter, for pan-frying
  • Pizza sauce, for dipping, warmed before serving
  • Optional additions, fresh spinach, diced bell peppers, jalapeños, or red pepper flakes

Instructions

  1. Assemble the filling: Lay one flour tortilla on a clean work surface and sprinkle half the shredded cheese onto one half of the tortilla, leaving about a 1/2-inch border.
  2. Add the pepperoni: Arrange the pepperoni slices evenly over the cheese, then sprinkle the Italian seasoning and garlic powder directly over the pepperoni for even seasoning.
  3. Layer and fold: Top the filling with the remaining cheese, then fold the tortilla in half so the edges align, pressing gently so the fillings stay in place.
  4. Heat the pan: Melt butter in a large skillet over medium heat until it foams, about 1 minute.
  5. Cook the quesadilla: Carefully place the folded quesadilla in the hot skillet and cook for 3-4 minutes on the first side until golden brown and crispy, then flip and cook the other side for another 3-4 minutes until equally golden.
  6. Transfer to plate: Use a spatula to carefully slide the quesadilla onto a serving plate, allowing any excess butter to drain back into the skillet.
  7. Cool briefly: Let the quesadilla rest for 1-2 minutes so the cheese can set slightly.
  8. Cut and serve: Slice the quesadilla into triangles using a sharp knife or pizza cutter, then serve alongside warm pizza sauce for dipping.
