Ingredients

  • 1 small rotisserie chicken, pulled and shredded, about 2 to 3 cups of meat
  • 3 medium zucchinis, diced into bite-sized pieces
  • 1 box (6-ounce) Stove Top chicken stuffing mix, you can use herb or original flavor
  • 1/2 cup butter, melted, for the topping
  • 1 can (10-ounce) cream of chicken soup, undiluted
  • 1/2 cup sour cream, adds richness and tang to the filling

  • 1/2 cup shredded cheddar cheese, for extra flavor and a golden top
  • 1/4 teaspoon garlic powder, optional, for a subtle garlic note

Instructions

  1. Shred the Chicken: Pull the meat from your rotisserie chicken, discarding skin and bones, and shred it into bite-sized pieces. You should have approximately 2 to 3 cups of shredded chicken.
  2. Dice the Zucchini: Wash and trim the zucchinis, then cut them into 1/2-inch cubes. Pat them dry with paper towels to remove excess moisture, which prevents a watery casserole.
  3. Mix the Filling: In a large bowl, combine the shredded chicken, diced zucchini, cream of chicken soup, and sour cream. Stir until everything is evenly coated, about 1 to 2 minutes.
  4. Prepare the Topping: Pour the entire box of Stove Top stuffing mix into a bowl. Add the melted butter and stir with a fork until the mixture resembles coarse breadcrumbs and is evenly moistened, about 1 minute.
  5. Preheat and Grease: Preheat your oven to 350 degrees Fahrenheit and lightly grease a 9 by 13 inch baking dish with butter or cooking spray.
  6. Layer the Filling: Pour the chicken and zucchini mixture into the prepared baking dish and spread it evenly across the bottom.
