  • Total Time: 45 minutes
  • Yield: 4 servings

Description

This Shepherd’s Pie features savory ground beef seasoned with beef stew seasoning and mixed with frozen vegetables and tomato soup, topped with a creamy layer of cheddar-crowned mashed potatoes. Perfect for busy weeknights or meal prepping for the week, this simple comfort food comes together in under an hour with minimal ingredients and maximum family-pleasing flavor.

Ingredients

  • 1 pound ground beef, 80/20 blend for optimal flavor
  • 1 (12 oz) bag frozen mixed vegetables, peas, carrots, corn, and green beans
  • 1 (10.75 oz) can tomato soup, undiluted
  • 1 (1.5 oz) packet beef stew seasoning mix, or homemade with garlic powder and onion powder
  • 1/2 cup water
  • 1/2 (13 oz) box mashed potatoes, plus butter, milk, and salt as directed on package
  • 1 to 2 cups shredded cheddar cheese, sharp cheddar adds more flavor

Instructions

  1. Brown the Beef: In a large skillet over medium-high heat, add the ground beef and cook for 5 to 7 minutes, breaking it apart with a spoon, until it's no longer pink and nicely browned.
  2. Drain Excess Fat: Pour off any excess grease from the skillet, leaving just a light coating at the bottom for flavor.
  3. Add Seasonings: Sprinkle the beef stew seasoning mix over the cooked beef and stir to coat evenly, cooking for about 1 minute until fragrant.
  4. Build the Filling: Add the frozen mixed vegetables, tomato soup, and water, stirring until everything is combined, then simmer for 5 minutes so the flavors blend.
  5. Stovetop Potatoes: In a separate pot, boil water with a pinch of salt, then whisk in the mashed potato flakes with butter and milk according to package directions, usually about 5 to 8 minutes total, until smooth and creamy.
  6. Transfer to Baking Dish: Pour the warm beef and vegetable filling into a 9 by 13-inch baking dish, spreading it in an even layer.
  7. Add the Potato Layer: Spread the mashed potatoes evenly over the beef mixture, using a spatula to smooth the top.
  8. Top with Cheese: Sprinkle 1 to 2 cups of shredded cheddar cheese over the potatoes, covering the entire surface.
  9. Bake Until Golden: Bake at 350 degrees Fahrenheit for 15 to 20 minutes, until the cheese is melted and bubbly and the edges are slightly golden brown.
